Recipe of the Week: Yam, Millet and Kale Fritters

A few weeks ago I was craving yams, and knew I had to do something about it. What I didn’t know, was how I was going to satisfy my craving. I mean, I could have made yam fries (which I’ll admit, I love as much as anyone else) but I felt like something a little more adventurous. So with my craving as my guide, I set out on a mission to find the perfect recipe.

My journey took me to Pinterest—which is an awesome recipe resource if you haven’t checked it out yet—and stumbled across a recipe from Yes, more please! that will be in my recipe box for years to come. The recipe in question being, yam, millet and kale fritters.

These delicious little bad boys are super easy to prepare and perfect for the whole family—including your kids. The original recipe called for sweet potato and quinoa, but the yams and millet I subbed in worked well too. Check out the full recipe HERE and make them tonight!
