Blueberry Banana Protein Powered Oatmeal

Like most people, mornings at my house are a whirlwind.  However, despite the chaos I still like to make sure that I eat something I know will fuel my morning, and eliminate the urge to stop and grab something on the go.

I’m not a huge fan of oatmeal, but when it comes to eating I like to have a “don’t knock it until you try it” attitude.  I was a bit skeptical about this recipe, namely because it was oatmeal, but drawn in by the fact that the prep was quick and could be started the night before.  I also liked that it took about 10 minutes to warm up in the morning.

From my first spoonful of this oatmeal my initial skepticism melted away. It was, and is,  the best oatmeal I’ve ever tasted, and kept me full for most of the morning.  ????????

You could definitely switch up the fruit if you want, and bring this recipe with you on the go if you’re in a rush. Just pop it in a thermos and eat it when you can.

Blueberry Banana Protein Powered Oatmeal


 

Ingredients

Makes 2 servings

 

1/3 cup steel-cut oats

2 1/2 cups water

1tbsp flax or chia sees

1/2tsp cinnamon

1/2 cup blueberries (frozen or fresh) or other fruit

1/2 banana sliced

1 scoop vanilla protein powder

Prep

  • Before bed, combine oats and water in a small pot.
  • Bring to a boil, remove from heat and cover for the night… then go to bed!
  • When you wake up, bring to a boil again and add chia seeds and cinnamon and mix well.
  • Remove from heat and stir in fruit and protein powder.
  • Enjoy!
