Maple Oat Banana Bread

Here is something delish to help brighten up this rainy Monday morning. I recently just ordered a new cookbook from Thug Kitchen, a blog I follow and LOVE! There slogan is “Eat like you give a F*ck” and I think its awesome. I made this bread yesterday and love it! I hope you do too. Great snack to go or quick breakfast. Its a great source of fibre and the sweetness comes from maple syrup.

 

Ingredients:

2 cups oat flour (You can just throw regular oats in a blender or food processor and run till it looks like flour

1 cup whole wheat pastry flour ( I used sprouted spelt flour)

1 & 3/4 teaspoon baking soda

3/4 teaspoon ground cinnamon

1/2 teaspoon sea salt

1/4 cup almond milk

1/4 teaspoon apple cider vinegar

2 cups mashed bananas (about 4 med bananas)

1/3 cup maple syrup

3 tablespoons of olive oil

1 teaspoon of vanilla extract

 

1 – Preheat your oven to 350. Grease and flour standard loaf pan so your bread won’t stick. Do not skip this step.

2- Grab a medium bowl and mix together the flours, baking soda, cinnamon & salt. Set that aside.

3 – In a small glass, mix together the ,milk and vinegar. Then grab a large bowl and mix together the mashed banana, maple syrup, olive oil and vanilla. Once all that is mixed up, add the milk mixture and that all over again. Add the dry ingredients to the wet stuff and mix until there are not more dry spots in the batter.

4 – Pour the batter into the loaf pan that you already got ready & bake until the top is golden brown and a toothpick comes out clean when you insert it in the bread, 30-40 minutes. When the bread is done, take it out of the loaf pan and let it cool a bit before diving in!

 

The original recipe from this cookbook swears a lot which add some punch and laughs as your reading the recipe but I omitted it from this blog post.
