I’ll be honest, I think regular white flour pancakes are gross. That may make me the worst Canadian ever, (since flapjacks with pure maple syrup are a bit of a Canadian classic) but I dislike them immensely; and it’s not just because I’m gluten free and can’t eat them. Though I’ll admit, that does add to my distaste a little.
Before you start thinking that I’m crazy, (I mean this is a blog post for pancakes) let me clarify things a wee bit. I don’t like white flour pancakes, but I LOVE buckwheat and spelt ones. Basically, I’m just picky when it comes to a stack of flapjacks.
Recently my husband and I went camping with some good friends of ours. One morning our friends wowed us when they cooked up a batch of delicious quinoa oatmeal pancakes; which I can truthfully say were the best pancakes that I have ever had. Even my kids loved them. The best part? They’re healthy and full of protein goodness.
Grill up a batch of your own! But be warned: you might not be able to go back to a box of Bisquick after you’ve tried them. 😉

Quinoa Oatmeal Pancakes
Ingredients:
2 cups of non dairy milk such as almond
1 1/2 cup of oats
2 tbsp of baking powder
2 tbsp honey or maple syrup
1/2 tsp sea salt
3 eggs
1/4 cup avocado or coconut oil
cinnamon to taste
vanilla to taste
1/2 cup of spelt flour, sub brown rice or coconut flour if you can’t tolerate gluten
1/2 cup cooked quinoa
Instructions:

- Soak oats in almond milk until the milk is all soaked up.
- Mix all dry ingredients together.
- Whisk eggs and oil together and add to dry ingredients.
- Mix oats mixture with egg and dry ingredient mixture.
- Cook over medium heat on a well oiled skillet.
