Last week I had a fridge full of leftovers that I needed to use up, so I decided to make a one-dish meal out of them. The dish, which consisted of brown rice, roasted cauliflower, yams and coconut curry chicken, was good, but not overly appealing to look at. So in the morning when I was preparing my lunch I dazzled up my remaining leftovers with a bright and cheerful sauce.
The sauce, which I have since coined my Green Magic Sauce, was super easy to prepare and really delicious. I just through all of the ingredients in my Vitamix, blended them until smooth, then packed it up to take with me to work. It was the colour I needed to brighten up my afternoon – that also happened to make my meal extra yummy.

Green Magic Sauce
Ingredients
1/2 cup extra virgin olive oil *Look for cold pressed in a dark glass bottle
Juice from 1 lemon
1/2 cup roughly chopped flat leaf parsley
1/2 cup roughly chopped cilantro
1/4 cup roughly chopped dill
Instructions
- This one’s super easy. Just add ingredients to a high speed blender, like a Vitamix and blend until smooth.
- Store in a glass jar for up to 5 days, and drizzle on anything. 😉
