Recipe of the Week: Chopped Salad

I’m a sucker for a good salad, and this quick and easy chopped salad is one of my favourites. Namely because you can adjust it based on what you have in your fridge.

Versatile and delicious, enjoy this salad with some chicken or beef kabobs. Or add some millet or quinoa and chicken to it for a quick lunch or dinner. It’s also great with feta cheese, so I encourage you to get adventurous.

Chopped Salad

Dressing Ingredients:

1/4 cup olive oil

1/8 cup apple cider vinegar

1 teaspoon dijon mustard

1 teaspoon maple syrup or honey

2-4 cloves garlic minced

1/2 teaspoon dried oregano

sea salt to taste

pepper to taste

 

Instructions:

Mix the above ingredients together in a glass jar and shake! Your dressing will last 5-7 days in the fridge.

 

Salad Ingredients:

1 organic cucumber diced

1 large red pepper, diced

1 large yellow pepper, diced

1/2 red onion, diced

1/2 cup pitted kalamata olives cut in half

1 cup diced tomatoes

 

Instructions:

Mix all the above ingredients in a bowl with enough dressing to coat.

This salad can be dressed ahead of time and will stay good in the fridge for a few days. Which makes it a great next next day lunch 😉
