Let’s face it, life’s hectic. And some night’s prepping dinner is just not in the cards… leading many of us down a dark path to a drive-thru window. But it doesn’t have to be that way. When you’re in a time crunch, chart a course for your local grocery store and grab yourself a pre-made roast chicken instead. It’s the perfect guilt-free choice when you’re in a pinch. I know because I literally pick one up every week.
The key when stopping in at your local grocer is to not, and I repeat not, pick-up a side of potato wedges to go with your roast chicken. Alternatively, pair your chicken with a green salad, steamed or stir-fried veggies, or chop it up and roll it into a wrap. There are so many quick and easy ways that you can use your roast chicken to prepare a meal that won’t knock you off of your nutrition goals.
What makes it even better is that you can use the leftovers to make a healthy lunch the next day, THEN cook the carcass in a crockpot with some carrots, celery, garlic, cider vinegar and water to make a yummy (and super nutritious) chicken stock. The only leftovers your fast food meal will leave you with is a stomach ache. ????

Dinner: Fiesta Chicken Salad
Toss together:
- Greens (kale, spinach, lettuce)
- Chopped Cucumber
- Diced Tomato
- Diced Peppers
- Corn
- Black Beans
- Sliced Chicken
Then Top with…
- Aged Cheddar (a small amount), Shredded
- Salsa
After that it’s ready to serve up and enjoy!
Lunch: Mediterranean Chicken Wraps
In a small whole grain tortilla, add…
- Spinach
- Cucumber, diced
- Tomato, diced
- Peppers, diced
- Black olives
- Sliced chicken
- A sprinkle of feta cheese
Then roll up and enjoy!
