Burrito bowls that last ALL week!

This has been my go to lunch all week. I accidentally made way too much rice on sunday night for this dinner so I’ve been eating it all week!
Recipe:
Cooked brown or sprouted rice mixture, I added 2 cans of beans, 1 can of chickpeas and 1 can of black beans as I made SO much rice, then I season mine with garlic and a little mild curry powder.
Top with half of an avocado, chopped.
1/2 cup fresh salsa
Thats it. Simple, easy, nutritious and delicious!
Other additions that would be good:
Chopped chicken
Chopped kale
Shredded cheese
Diced cucumbers
Diced Carrots
